Grønt Marked Product Guidelines 2023

Products admitted to the Grønt Marked

  • Fresh vegetables and fruit (fruit, grain, herbs, legumes, mushrooms, sprouts and vegetables)
  • Dry fruit and nuts
  • Meat (fresh meat and meat products)
  • Fish (fresh fish and fish products / cultivated or wild shellfish)
  • Dairy products & Eggs
  • Bakery products
  • Preserves (jam, honey, chutney, pickles, vinegars etc.)
  • Juices
  • Artisanal beers and ciders
  • Liqueurs and Spirits  
  • Seeds
  • Flowers & Plants
  • Handcrafted products from local materials, such as wood, wool, hemp, leather, wax etc.
  • Compost and soil
  • Worms and worm farms

Grønt Marked Product Guidelines

  1. Farmers sell direct to the public in a fair, balanced and open-air marketplace
  2. Producers may only sell products at the market, which are produced, grown or cultivated themselves. Exceptions are allowed for farmers who sell small quantities of neighbouring or partner producers that also follow the market guidelines. The name of the producer must be clearly displayed.
  3. Producers selling jams, juice, preserves, ferments and similar, may only sell products that are hand-made using ingredients produced by themselves or bought from local suppliers when the ingredients are in season and align with the Grønt Marked values.

    For stall holders selling processed goods it is required that at least 70% of the ingredients are locally sourced from small-scale and organic farms. We encourage producers and farmers attending the markets to connect and collaborate with each other where possible.

  4. No products may consist primarily of imported ingredients. A few exceptions may be allowed, if the products are imported directly from producers and support the livelihoods of poor communities and all possible efforts are made to ensure sustainable sourcing (such as in the case of coffee beans, chocolate etc.).
  5. Producers must seek to use sustainable farming methods or source ingredients that are produced with such methods*. This includes following requirements for organic production, regenerative farming practices, natural resource preservation, best practices on animal welfare etc. Not all these practices must be quantifiable or certified, but producers must explain how they attempt to be sustainable.
  6. Producers who follow practices that increase biodiversity and support healthy soils and water environments will be preferred. Indigenous and organic seeds are also prefered (local and old varieties).
  7. Grønt Market is a plastic free market unless the plastic used is required for health standards or product longevity. All packaging should be minimised and consumers encouraged to bring their own containers/bags/vessels. Packaging should be from sustainable sources, while being appropriate for conserving the products that are sold.
  8. Biodynamic and organic labelling can only appear on signage and packaging if the product is certified with a recognised organisation
  9. The producers are fully responsible for ensuring that their activities at the market comply with all laws and regulations, including The Danish Veterinary and Food Administration (Fødevarestyrelsen) and SKAT.
  10. Producers must display all signs required and label all products in accordance with the law (name, prices etc.)
  11. Grønt Marked encourages that the person manning the stall must be either the principal producer, a family member or farm/ business based employee, all of whom must be directly involved with growing, rearing, catching or making of the product. In the case of value added products, stallholders must be involved in the production process and have thorough relevant product knowledge.
  12. Producers should inform Grønt Marked if they wish to sell other products than those listed in their annual sign-up registration.
  13. Organic field grown plants and flowers can be sold.
  14. The Grønt Marked is primarily a food and produce market. During the Christmas period we do allow a small number of non-food stalls at the markets. These non-food stalls are required to use either local or re-used materials if they wish to attend. 

*Sustainable Production:A Farmer practicing environmentally friendly methods of farming that allow the production of crops or livestock without damage to the farm as an ecosystem, including effects on soil, water supplies, biodiversity, or other surrounding natural resources. The concept of sustainable agriculture is an “intergenerational” one in which we pass on a conserved or improved natural resource base instead of one which has been depleted or polluted. Terms often associated with farms or ranches that are self-sustaining include “low-input,” organic, “ecological,” “biodynamic,” and “permaculture” (Source: EPA)”. Moreover, a sustainable production model should include the ethical treatment of individuals working at the farm.

Requirements for animal-based products

  • All must follow best-practices on animal welfare (space, access to outdoors, free range etc.)
  • Rare and indigenous breeds are prefered
  • 100% fed with the farm’s own feed or local products (closed loop)
  • Only handmade dairy products from the farm itself 
  • Producers may only sell milk from herds they manage and milk themselves 
  • Only fish from sustainable and small-scale local fishing operations

Pricing

We expect that retail prices at Grønt Marked market do not exceed prices for your products at third party stores (e.g. supermarkets, boutique shops).
Farmers markets globally are places for consumers to purchase at fair prices directly from producers, without intermediary prices.
Grønt Marked is a place for direct sales to consumers. This is to allow producers earn a higher margin than when selling through third parties. This is a requirement for all producers at the market.

REQUIREMENTS FOR

  • Only handmade dairy products from the farm itself 
  • Producers may only sell milk from herds they manage and milk themselves 
  • Only fish from sustainable and small-scale local fishing operations (small boats, local waters, sustainable and selective fishing methods)
