An introduction

Hello! My name is Minaka. I’m originally from Japan and moved to Denmark three years ago to pursue a master’s degree in food innovation. My current research focuses on Japanese food culture, particularly the concepts of umami and koku. Beyond academics, I’m deeply passionate about good food and capoeira, the Afro-Brazilian martial art.

How I found Grønt Marked

My journey with Grønt Marked began serendipitously about a year ago. While biking around Copenhagen, I stumbled upon the market in front of Lille Bakery, on Refshaleøen. I was immediately captivated by its charming setup, featuring stalls brimming with local delights and a warm, welcoming atmosphere.

Initially, I didn’t know much about the volunteering opportunities at Grønt Marked. However, a friend from Japan visiting Copenhagen on a working holiday visa started volunteering there and shared her experiences with me. My curiosity grew, and I had the chance to help with closing duties at the Harvest Festival held at the Open Air Museum (Frilandsmuseet) on September 29, 2024. Inspired by the close-knit, cheerful atmosphere among the volunteers, this motivated me to become part of the team. In October 2024, I officially joined as a volunteer, eager to contribute and learn about the market’s operations and its connections with local producers.

A typical volunteer shift

Since joining, I’ve embraced a variety of roles, including opening, middle, closing, and kitchen shifts. Each comes with its own unique tasks and challenges, and I’ve enjoyed them all in different ways. However, my favourite shift has to be the kitchen shift. It allows for meaningful interactions with customers who, like me, are passionate about good food. Seeing their smiles as they enjoy thoughtfully prepared dishes is incredibly fulfilling. Plus, the warmth of the kitchen is a welcome bonus during Denmark’s chilly weather.

The atmosphere at the market varies with the seasons. Sunny days are bustling and lively, while colder, greyer days have a cozy, intimate charm. Sundays at Grønt Marked have become a cherished part of my routine, and I’m already looking forward to the 2025 season.
