From Soil to Supper: Celebrating Biodiversity in Copenhagen’s Food Culture

Grønt Marked will host the Biodiversity Festival at Skjolds Plads — a day-long celebration of the rich cultural and biological diversity that shapes how we eat, grow, and connect in Copenhagen.

 

The festival will transform our regular farmers market into a vibrant gathering filled with talks, workshops, tastings, demonstrations, music, and food. Visitors will explore how biodiversity is essential not only for environmental and human health and climate resilience, but also for shaping the dynamic food culture Copenhagen is known for.

Exploring the impact of a biodiverse diet

From wild fermentation to freshly milled heritage grains to wild herbs and heirloom beans, the festival brings together a diverse community of producers, cooks, and food advocates who are redefining what it means to eat well in the city. Whether you’re a home cook or a restaurant professional, this is an invitation to discover how biodiversity influences the flavor, quality, and accessibility of the food we enjoy every day.
 
Supported by the Municipality of Copenhagen, the Biodiversity Festival brings together a wide network of voices. Including farmers, breeders, beekeepers, seed savers, bakers, millers, cooks, researchers, artists, and food advocates — all working toward a more equitable and sustainable food future.

Meet The Producers, 4th Edition

Meet Sam, baker and owner of Bageriet B.  Sam runs his bakery with both people and the planet in mind, showing how good bread can also mean good choices for our food system. In this edition of ‘Meet the Producers’, he shares how biodiversity shapes his baking, why seasonality matters behind the scenes, and how pastries and loaves can directly support local farmers making sustainable decisions.   At the Biodiversity Festival, Sam will be teaching us about the benefits of rye flour from 12:00–12:45. Meet The Producers, 3rd Edition

  Biodiversity Festival – Meet the Producers, Vol. 3 Grønt Marked has many moving parts, but one we simply couldn’t function without is our wonderful community of volunteers. In this edition of “Meet the Producers,” we’d like to introduce you to Zaineb. Though not a producer, Zaineb is a seasoned volunteer and an integral part of the market community. Our volunteers come from every corner of the world, bringing the market to life each Sunday. They represent diverse backgrounds, countries, professions, and communities, yet they’re united by a shared passion: supporting a more sustainable food system while building friendships and connections around good food. This is exactly the type of diversity we’ll be celebrating at our upcoming Biodiversity Festival, a cultural exchange that builds community strength alongside environmental richness💚 Volunteers help build and break down the market, but their contributions go far beyond. Why a Farmers Market?

We believe all farmers should have the possibility to sell at a fair price directly to the consumers – at the same time, consumers should have access to fresh, seasonal, local and healthy food. In this sense, Farmers Market are an important step towards connecting local farmers and end-consumers, cutting out the middleman. Moreover, Farmers Market are places where to build relations – they contribute to creating a transparent food-shopping alternative where human connection and community comes first.

Which kind of products can I find at the market?

Local, Seasonal and Sustainable grown veggies, fruits, mushrooms, grains and flowers. Ethical and Sustainable animal produce such as eggs, cheese, milk, meat and charcuterie. Processed handcrafted produce such as vinegars, spirits, jams, ferments etc. made using local and sustainable raw materials. For more info, please feel free to check our guidelines.

How do you select the producers?

Can Grønt Marked organize a market for my event?

We don’t do events. Farmers Markets are not an event for entertainment, but a regular monthly or weekly appointment for people to buy their groceries. The main goal is for producers to sell while establishing connections and for consumers to buy good and healthy food while learning about our food system. In order to guarantee successful markets, the focus should always be on the farmers and their produce.

What forms of payment do you take?

All the producers take MobilePay & cash. Some of them also accept cards. 

Do you sell plastic bags?

We suggest you bring your own bags from home. Most producers use reusable or no packaging when possible. But cheese & juices are sometimes in plastic. All the producers use biodegradable materials to wrap produce when up to Health & Safety standards.

Is there a sheltered area in case of rain?

Grønt Marked is an open air market, so there are no covered areas.
